Whole Wheat Pizza Crust for One

It’s slightly nutty, chewy (from the vital wheat gluten), yeasty, and absolutely outstanding. Everyone in your home will be wondering what you’re making when they smell it baking in the oven.

Whole Wheat Pizza Crust for One


1 Serving

  • 1/2 cup whole wheat flour
  • 1 tsp vital wheat gluten (optional)
  • 1/4 tsp salt
  • 1/4 tsp sugar (optional, helps browning)
  • 1/3 tsp instant yeast (or 1/4 tsp active dry yeast)
  • 1 tsp olive oil
  • 3-4 tbsp warm water (adjust as needed)

Step 1

In a bowl, whisk together flour, vital wheat gluten, salt, sugar, and yeast.

Step 2

Add olive oil and 3 tbsp warm water. Stir until a dough forms. If dry, add up to 1 more tbsp water a little at a time.

Step 3

Knead on a floured surface (or in the bowl) for about 5–6 minutes until smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover, and let rise 30–45 minutes (or until nearly doubled).

Step 5

Preheat oven to 475°F (245°C).

Step 6

Roll or stretch the dough into an 8-inch round (thin crust style). Place on parchment or a lightly oiled baking sheet.

Step 7

Spread sauce, sprinkle cheese, and add your chosen toppings.

Step 8

Bake 10–12 minutes, until the crust is golden brown and the cheese is melted and bubbly. Enjoy!
