Peanut S’mores Oatmeal

Every wanted to feel like you’re sitting around a campfire while having breakfast? Well, now it’s finally possible, with oatmeal s’mores. Oatmeal made creamy with Greek yogurt and chia seeds, then topped with sweet marshmallows and graham crackers, then balanced out with semi-sweet chocolate chips, then finally roasted peanuts to add a crunchy contrast. It’s almost perfect how delicious this tastes! It’s even a complete meal, with protein coming from the Greek yogurt, and healthy fats from the peanuts and chia seeds.

Recipe


Makes 1 bowl

1 cup Water

1/2 cup Rolled Oats

1/2 cup Greek yogurt

2 tablespoons Roasted Peanuts

1 Tablespoon semi-sweet or dark Chocolate Chips

1 Large Marshmallow or 1 tablespoons Mini Marshmallows

1 Sheet of Graham Cracker

Pinch of Sea Salt

Step 1

Put a small saucepan on the stove, add the water, then bring to a boil

Step 2

When the water comes to a boil, add your oats and sea salt, then turn the heat to medium-low. Cook for about 5 minutes, or until oatmeal becomes thickened.

Step 3

Transfer the oatmeal to a bowl, then stir in the Greek yogurt and chia seeds until combined.

Step 4

Chop up the large marshmallow into smaller chunks, then sprinkle on top of the oatmeal. Then, sprinkle on the chocolate chips and peanuts.

Step 5

Put the bowl of oatmeal in the microwave for 30 seconds on high power, or until the chocolate chips and marshmallows become slightly melted. Break up 1 sheet graham cracker, then sprinkle the chunks onto the oatmeal. Enjoy!
