Oyster Noodle Soup for one

You’ve definitely heard of chicken noodle soup, but if you’re pescatarian you can’t have chicken. So, why not have oyster noodle soup? This is great when you’re sick and your craving a warm hug in a bowl. Seriously, this soup will help you feel better, even if you aren’t sick.

Oyster Noodle Soup for one


1 serving

  • 1 can oysters in oil (3 oz.)
  • 1/4 cup onion, chopped (or 2 tsp dried minced onion)
  • 1/3 cup frozen mixed veggies
  • 1/4 tsp dried thyme
  • 1 cup whole wheat noodles of choice, cooked according to box directions
  • Salt and pepper to taste

Step 1

Heat a skillet over medium, then add the oysters and onion. cook for 2-3 minutes, or until onion is translucent.

Step 2

Add the frozen veggies and cook for another 1-2 minutes, then remove from heat.

Step 3

Heat 2 cups of water in a pot, then add the veggies and oysters, pasta, and thyme. Simmer 1-2 minutes, add salt and pepper to taste, and enjoy!
