
You’ve definitely heard of chicken noodle soup, but if you’re pescatarian you can’t have chicken. So, why not have oyster noodle soup? This is great when you’re sick and your craving a warm hug in a bowl. Seriously, this soup will help you feel better, even if you aren’t sick.
Oyster Noodle Soup for one
1 serving
- 1 can oysters in oil (3 oz.)
- 1/4 cup onion, chopped (or 2 tsp dried minced onion)
- 1/3 cup frozen mixed veggies
- 1/4 tsp dried thyme
- 1 cup whole wheat noodles of choice, cooked according to box directions
- Salt and pepper to taste
Step 1
Heat a skillet over medium, then add the oysters and onion. cook for 2-3 minutes, or until onion is translucent.
Step 2
Add the frozen veggies and cook for another 1-2 minutes, then remove from heat.
Step 3
Heat 2 cups of water in a pot, then add the veggies and oysters, pasta, and thyme. Simmer 1-2 minutes, add salt and pepper to taste, and enjoy!
