High Protein Sardine Pasta


Do you just love seafood? Do you love delicious pasta with a bright red, salty, and umami tomato sauce? Do you love eating tons of fiber and nutritious, unprocessed, whole foods? Well, if you answered yes to all three of those questions, then you’ll absolutely love this recipe! This recipe is packed with protein from both the sardines and the chickpea pasta. It also packs plenty of fiber from the vegetables. This pasta tastes so good that you’ll never go back to eating plain spaghetti and meatballs!

Makes 4-6 Servings

  • 8 Ounces Chickpea Pasta (any shape will do)
  • 2 Cans mixed vegetables
  • 2 Small cans tomato sauce
  • 2 tablespoons tomato paste
  • 4 cans sardines packed in water
  • 6 baby Bella mushrooms
  • 2 tablespoons minced garlic
  • 2 stalks celery
  • 1 medium white onion
  • 1/4 cup nutritional yeast
  • 1/4 cup Italian seasoning
  • 2 tablespoons capers
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Pinch of saffron
  • Pepper to taste

Step 1

Get out a large pot and fill it with water. Bring it to a boil, add salt, then cook the pasta according to its directions.

Step 2

Cut up all of your vegetables. Cut the celery into small pieces, dice the onion, and cut the baby Bella mushrooms into slices.

Step 3

Get out a skillet, turn on to medium heat, then spray with nonstick cooking spray. Add the celery and onions, and cook for 2-3 minutes, or until the onions become transparent. Add the baby Bella mushrooms and garlic, then cook for another minute. Finally, add both cans of mixed vegetables and cook for one minute.

Step 4

Get out a large saucepan, then add the tomato sauce, tomato paste, Italian seasoning, black pepper, nutritional yeast, a pinch of saffron, and last but not least, the tinned sardines, then turn the burner to medium heat.

Step 5

Combine the vegetables with the sauce, turn the heat off, add the lemon juice and lemon zest, then throw in the capers. Stir the sauce well to combine.

Step 6

Add the pasta to the sauce, then stir until all of the pasta becomes coated. Top it with sliced olives, pine nuts, sliced almonds, or grated parmesan, or even just enjoy it plain.
