Healthy Plantain Waffles

Ever thought that you could make waffles out of plantains? I bet you haven’t! These plantain waffles are super nutritious and utterly delicious. You’ll never want to go back to plain old eggos ever again! To make them even better, add some nut butter to give them extra protein, healthy fats, and make them taste great!

Makes 8 mini waffles or 4 large waffles

  • 1 cup whole wheat flour
  • 1 very ripe plantain (Brown in color)
  • 1/4 cup chia seeds
  • 1 cup water, divided
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • Optional Toppings: Chocolate chips, coconut flakes, chopped nuts, or dried fruit

Step 1

Get out a medium mixing bowl, then add the chia seeds and 1/2 cup of water.

Step 2

Get out a large mixing bowl, then combine the flour, salt, and the baking soda and powder.

Step 3

Peel the ripe plantain, then put it in a small bowl and mash with a fork it until it becomes paste-like.

Step 4

Combine the plantain with the chia seeds, then add the maple syrup, vanilla, and lemon juice to it as well. Stir well to combine.

Step 5

Add the plantain liquid to the dry ingredients, and stir. Add the last 1/2 cup of water to thin out the batter.

Step 6

Spray a waffle iron with non-stick cooking spray, then scoop 1/4 cup of the batter onto the iron. Sprinkle your desired toppings on top of the batter, then close the waffle iron.

Step 7

Once the waffle is done, transfer it to baking sheet with parchment paper and repeat the process until all of the waffles are done.

Step 8

Put the baking sheet in the freezer to allow the waffles to harden. When you want tp enjoy some, simply take them off the sheet and throw them in the toaster! Top with nut butter, or just have them plain, and enjoy!
