These super healthy protein bars are absolutely delicious! I love having them after a workout, because they almost feel like I’m eating a treat! The grape nuts make them crunchy and give them a nutty flavor, while the dates, vanilla, and lemon juice help to sweeten them up. If you wish to make this recipe vegan, substitute a vegan protein powder for the whey protein, and the bars will still turn out just as good!
Recipe
Makes 4-5 protein bars
- 1 cup Grape Nuts Cereal
- 1 scoop whey protein
- 10 dates
- 1 ounce pumpkin seeds
- 1/4 cup water
- 1 tsp vanilla extract or vanilla paste
- 1 tsp lemon juice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon sea salt
Step 1
Put the pumpkin seeds in the microwave for 1:30-2 minutes on full power to give them a delicious toasty flavor.
Step 2
Get out a food processor, then combine the dates, water, protein powder, lemon juice, cinnamon, and vanilla. Blend everything together until it becomes a smooth liquid.
Step 3
Add the grape nuts, pumpkin seeds, and sea salt to the food processor, then pulse it once or twice, or until the mixture becomes uniform.
Step 4
Get out a small baking sheet, and line it with aluminum foil. Spray the foil with nonstick cooking spray.
Step 5
Scoop all of the batter out onto the aluminum foil, then shape it into a small rectangle.
Step 6
Bake the batter for 15-20 minutes, remove from the oven, and allow to cool for 5-10 minutes. Cut the rectangle into small, bar sized pieces, and store them in the freezer to allow them to harden.
