These pancakes are a must if you’re looking to eat healthy but still enjoy some of your favorite foods.
Recipe
Servings: 4 people, 12 small pancakes or 8 large.
- 1 1/2 cups mashed ripe banana (about 3 medium)
- 1 cup diced strawberries (around 5-7 strawberries)
- 1 egg
- 3/4 cup nonfat plain Greek yogurt
- 3/4 cup water or milk
- 1 tbsp maple syrup (optional for sweetness)
- 2 cups whole wheat flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 – 1 tsp vanilla extract (optional for flavor)
- Pinch of salt
- Cooking spray
Step 1
In a large bowl, combine mashed banana, diced strawberries, egg, Greek yogurt, water, maple syrup, and vanilla if using.
Step 2
In a separate bowl, mix whole wheat flour, baking powder, baking soda, cinnamon, and salt.
Step 3
Stir dry ingredients into the wet mixture until just combined. Batter should be thick but pourable – add a splash more water if needed.
Step 4
Heat a nonstick skillet or griddle over medium heat. Lightly spray it with oil. Pour 1/4 to 1/3 cup of the batter per pancake, depending on your desired size. Cook them for 2-3 minutes until bubbles form, then flip and cook 1-2 more minutes.
Step 5
Top them with extra strawberry or bananas, a nut butter of your choice, Greek yogurt, maple syrup, or sliced nuts or seeds.
