
A comforting but healthy recipe, perfect for anyone on a budget who doesn’t have much time to cook. Make sure to really pay attention when you cook the cod so it doesn’t get rubbery!
Cod, Potato, and Corn Chowder
1 Serving
- 1 Potato, washed and diced (peel if desired)
- 1 fillet cod (fresh or frozen, thawed)
- 1/3 cup frozen sweet corn kernels
- 1/2 cup milk
- 1/4 tsp dried thyme
- salt and pepper to taste
Step 1
Put the potatoes and thyme into a large pot, add 1-1.5 cups of water, bring to a boil, then simmer on low for 15 minutes
Step 2
Break up the cod fillet into chunks and add them to the water. Cook for 1-2 minutes.
Step 3
Add the corn and milk, then simmer for 1 minute. Remove from heat and add salt and pepper to taste
