
I eat a lot of different types of foods. I like to keep my diet diverse to ensure that I get enough nutrients. But, if I had to pick my favorite types of foods, it would definitely be legumes.
I love all types of legumes, from black beans to peanuts to lentils. And, I have a few great reasons why.
The first reason I love them so much is because of how versatile they are. With just beans, you can make tacos, soups, salads, burgers, and even dips. Peanut butter is great on toast, in oatmeal, in curry, or as a sauce for noodles.
The second reason I love them so much is because of how nutritious they are. Legumes contain a lot of fiber, plant based protein, and B vitamins, making them a nutrient rich food. They also have lots of complex carbs, which is very helpful when you do lots of swimming and running like me.
And the third reason I love them is because of how cheap they are. If you compare the price of a pound of dried beans to a pound of beef, you’ll immediately notice the difference. Beans are also the more nutritious and sustainable option of the two.
