
Alright, this question is right down my alley. Well, I guess I’ll have to give away my favorite recipe (It’s not actually a secret). My favorite recipe by far has to be The Best Vegan Cheese Recipe by Simple Vegan Blog.
Let me start by saying this cheese sauce is absolutely delicious. I mean, it’s seriously so good on everything; pasta, nachos, tacos, etc. What makes this cheese sauce so good is the nutritional yeast. This sauce contains the perfect amount of it, so it’s not too strong, but just right to where you get that cheesy flavor. And the texture is just heavenly. It’s so smooth, you wouldn’t believe that it contains potatoes and carrots. And it’s got a bright golden color, reminiscent of nacho cheese.
I don’t know what it is about this recipe (I’m not even vegan), but I 100% prefer this over regular cheese. I just like the flavor so much better! And as a bonus, it’s much healthier for you than regular cheese, as it has vitamins, minerals, and protein from the nutritional yeast, fiber and vitamins from the potatoes and carrots, and healthy fats from the olive oil. Regular cheese just contains too much sodium and saturated fats for me.
